Aubergine Fries (Keto & Low Carb)

Described as "crunchy, salty and dippable" - I was pretty much sold. If you are carb or calorie counting and want a french-fry like treat, without the heavy carbs, potatoes or guilt - this is a must try. With only a handful of ingredients, it's quick to make up, great for kids and works really well as a side appetiser. My one key tip is to make a great dipping sauce such as this home-made quick and easy spicy-mayo or this super delicious Tzatziki.

You will need:

  • 2 medium sized eggplants
  • 1 cup almond flour
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder or garlic granules
  • 2 eggs
  • pinch of salt
  • 2 tbsps. coconut oil

Method:

1. Pre-heat oven to 200 degrees (400 F) and line a baking tray with baking paper

2. Peel eggplant and cut into french-fry shapes (long and thin). Keep aside

3. In a mixing bowl, combine the almond flour, cayenne pepper, garlic powder and a pinch of salt. Mix well

4. In a separate bowl beat both eggs

5. Dip each egg plant fry into the egg then into the almond flour mixture, then back into the egg, then back into the almond flour mixture

6. Repeat for all. Then bake in the over for 25-30 minutes until golden brown and crispy
